FSSAI – Food Safety and Standards Authority of India, is an organization which detects and governs the food business in India. FSSAI is an autonomous body, established under Ministry of Health & Family Welfare, Government of India. It is mandatory to obtain license or FSSAI registration for all food business operators in India. It may include manufacturing units, processing units, storage and distribution units also.
FSSAI is a 14 digit unique registration or license number which needs to be printed on all the packets of food products. Registration procedure is governed by Food Safety & Standards (Licensing and Registration of food Business) Regulations, 2011.

Any person who doesn’t fall under the category of petty food business operator can obtain Central license.
Annual sales of organization above 20 Crores
Trade – worldwide
Manufacturing units must have capacity of 2MT per day
Dairy units must sold 50,000 litres per day and 2500MT per annum
Vegetable oil processing units must involve more than 2 MT per day
Meat processing units must involve in more than 500kg meat per day or 150MT per annum
Wholesaling food products must have turnover more than 30 crores
Retailing involved FBO should have turnover more than 20 crores
Distributors involved should have turnover more than 20 crores
Suppliers must have turnover more than 20 crores

Application must be filed by Food Business Operator and it should have certain attachments as, self-declaration, affidavit and annexures.

Non-compliance leads to penalty. As every registered person under FSSAI has to comply with rules & regulations under Food safety and Standards Act, 2006. After the inspection conducted by food safety office, he provides marking as:
Compliance, Non-compliance, Partial compliance and Not observed
If food safety officer might issue an improvement notice based upon the reports of inspection. If operator fails to comply with this improvement notice his license may be cancelled. Aggrieved person may appeal to State Commissioner of Food Safety. Decision passed by State Commissioner of Food Safety can be challenged by filing appeal to Food safety appellate tribunal/ High Court.
